¼ cup low-fat mayonnaise dressing or salad dressing
2 tsp sugar
1 tsp cider vinegar
2 cups broccoli florets
½ cup shredded carrot (1 medium)
¼ cup shredded reduced-fat cheddar cheese
¼ cup sliced water chestnuts, drained
2 Tbs chopped red onion (optional)
2 Tbs crumbled crisp-cooked bacon
For dressing, in a small bowl stir together mayo dressing, sugar and vinegar.
In a medium bowl combine broccoli, carrot, cheese, water chestnuts, and, if desired, onion.
Pour dressing over broccoli mixture, toss to coat. Sprinkle with bacon.
Cover and chill for 1 to 5 hours.
