Creamy Turkey Fettucine
Serves 2
I suppose you could call this a one-dish meal if you decide on spinach pasta, but one of my speedy salads would be a nice accompaniment.
4 oz dried spinach or plain fettuccine
1/2 cup sour cream
1 Tbsp all-purpose flour
1/4 cup low salt chicken broth
1/4 tsp dried sage, crushed
1/8 tsp pepper
6 oz turkey breast tenderloin
1/8 tsp salt
3/4 cup sliced fresh mushrooms
2 green onions, sliced
1 clove garlic, minced
Cook pasta according to package direction.
Meanwhile, in a small bowl, stir together sour cream and flour, then gradually stir in chicken broth, sage, and pepper. Cut turkey into bite-size chunks and sprinkle with salt. Set aside.
Heat an 8-inch non-stick skillet over medium-high heat. Add turkey, mushrooms, onions, and garlic to skillet and cook, stirring, about 3 minutes or until turkey is no longer pink. Stir in sour cream mixture, cook and stir until thickened and bubbly.
Pasta,s ready, so drain it and serve turkey mixture over it to your wife/husband/partner/buddy/girlfriend/boyfriend/neighbor or eat it all yourself.
