1 Graham Cracker Crust (I use store bought)
4 Egg yolks (*optional* Save whites for crust)
5oz Lime Juice
1 Can Sweetened Condensed Milk
1 drop green food coloring
Pre-heat oven to 350 degrees
*Optional* Beat egg whites until very foamy, take a brush and paint entire crust with egg white foam, sprinkle with sugar to lightly coat. Place in oven at 350 and bake 7-10 min, or slightly golden. Remove and cool completely before adding pie mixture.
Combine Sweet. Cond. Milk and yolks at low speed. Add one drop of green food coloring and very slowly add Lime Juice. Mix well blended and pour into crust. Bake at 350 degrees 10-15 min., just until it sets up. Remove, cool completely, and refridgerate over night.
~ Note ~ Lime Juice is usually sold in about a 15 ounce bottle. So I make 3 pies at once. You can also leave food coloring out, but due to yolks being used, your pie will be a yellow in appearance instead of greenish.
