makes:9 servings

1 tablespoon olive, canola or soybean oil
1 cup uncooked wild rice
1 1/2 cups sliced fresh mushrooms (4 oz)
4 medium green onions, thinly sliced (1/4 cup)
2 1/2 cups water
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup bacon flavor bits or chips

1. In 10-inch nonstick skillet, heat oil over medium heat. Add wild rice, mushrooms and onions; cook about 3 minutes, stirring occasionally, until onions are tender.
2. Stir in water, salt and pepper. Heat to boiling, stirring occasionally; reduce heat.
3. Cover; simmer 40 to 50 minutes or until rice is tender; drain if necessary. Stir in bacon bits.
