Primavera Pizza Pie
Lots of colorful vegetables make this pizza attractive as well as nutritious.
Ingredients:
1 (10-ounce) prebaked Italian thin pizza crust
1/4 pound (1/4-inch thick) slice Alpine LaceŽ Deli Reduced Fat Provolone Cheese, shredded
1 tablespoon olive oil or vegetable oil
1 1/2 cups thinly sliced mushrooms
1 teaspoon finely chopped fresh garlic
1 cup broccoli florets, cut into bite-sized pieces
1 cup thinly sliced red onion strips
3 Roma tomatoes, thinly sliced
1/2 teaspoon dried Italian seasoning
Instructions:
Heat oven to 425°F. Place pizza crust onto ungreased baking sheet. Sprinkle with 1 cup cheese.
Heat oil in 10-inch skillet over medium-high heat; add mushrooms, garlic, broccoli and onion. Cook, stirring occasionally, until onion is tender (3 to 5 minutes).
Arrange vegetables on pizza crust. Top with tomatoes; sprinkle with Italian seasoning.
Bake for 7 minutes. Sprinkle remaining cheese on tomatoes. Continue baking until pizza crust is heated through and cheese is melted (2 to 3 minutes).
To serve, cut into wedges.
