HONEY CRUSTED CHICKEN
Nonstick cooking spray
4 skinless, boneless chicken breast halves
1 Tbs honey
1 Tbs orange juice
¼ tsp ground ginger
¼ tsp black pepper
Dash cayenne pepper (optional)
¾ cup cornflakes, crushed
½ tsp dried parsley flakes (optional)
Lightly coat a shallow baking pan with cooking spray. Place chicken in pan.
In a small bowl combine the honey, orange juice, ginger, black pepper, and, if desired cayenne pepper. Brush honey mixture over chicken.
Combine cornflakes and parsley (if using). Sprinkle cornflake mixture over chicken.
Bake, uncovered, in a 350 degree over for 18-20 minutes or until chicken is tender and no longer pink.
