Split Pea Soup
1 cup split peas (I use yellow but green is good too)
2-3 carrots cut into thin rounds
2-3 celery sticks chopped
2 potatoes cut into smallish bite size cubes
2 tbsp ginger finely chopped
2 tbsp oil ( I use sesame but canola or olive is good too)
1 tbsp ground cumin (more or less to your taste)
1 tbsp basil (more or less to your taste)
half a lemon
1 tsp honey
5 cups water
Cooking instructions: Rinse peas. Place split peas in 5 cups water and bring to boil. Reduce heat and cook covered for 40 minutes or until splits peas are just tender. Heat oil in a seperate pan and add potatoes, celery and carrots. Cook for a minute then add ginger and spices. Cook for 4-6 minutes. Squeeze lemon juice into pan during this 4-6 minutes. Add vegetables to split peas and water. Add honey to mix. Cook for another 20 minutes or until veggies are tender. Add salt and pepper to taste. Eat and Enjoy
