Split Pea Soup

1 cup split peas (I use yellow but green is good too)
2-3 carrots cut into thin rounds
2-3 celery sticks chopped
2 potatoes cut into smallish bite size cubes
2 tbsp ginger finely chopped
2 tbsp oil ( I use sesame but canola or olive is good too)
1 tbsp ground cumin (more or less to your taste)
1 tbsp basil (more or less to your taste)
half a lemon
1 tsp honey
5 cups water

Cooking instructions: Rinse peas. Place split peas in 5 cups water and bring to boil. Reduce heat and cook covered for 40 minutes or until splits peas are just tender. Heat oil in a seperate pan and add potatoes, celery and carrots. Cook for a minute then add ginger and spices. Cook for 4-6 minutes. Squeeze lemon juice into pan during this 4-6 minutes. Add vegetables to split peas and water. Add honey to mix. Cook for another 20 minutes or until veggies are tender. Add salt and pepper to taste. Eat and Enjoy Very Happy
