Baby Spinach & Sausage Macaroni

If you’re bothered by the white pasta and fatty – that’s why it tastes so good – sausage, change the “white” to “wheat” and use the less fatty turkey sausage. It will still be a terrific dish.
Bring a large pot of water to a boil. And cook pasta until just tender, 9 to 11 minutes, or according to package directions.
Meanwhile, cook sausage in a large nonstick skillet over medium-high heat, breaking it up into small chunks with a wooden spoonfor about 5 minutes. Stir in garlic, spinach and tomatoes. Cook, stirring often, until the spinach wilts and the tomatoes begin to soften, about 3 minutes. Remove from heat; cover and keep warm.
Combine 1/2 cup cheese with pepper & salt in a large bowl.
Remove 1/2 cup of the pasta water and drain the pasta. Whisk the reserved water and oil into the cheese mixture; add the pasta and toss to combine. Plate up with the sausage mixture spooned over the pasta along with a sprinkling of Parmesan.
